Are you going to have their TV or phone service? If so, you give up some things by not having the Verizon router in place in some capacity (it doesnt even always need to be the "main" router).
If you're internet only, you can likely get the ONT switched to Ethernet and just plug into an Edgerouter. That's what we have here. When we bought the house, there was a cat5 run out to the ONT for phone and the normal coax install. I reterminated for Ethernet and had VZ switch over. It works great. Newer installs (or the 150mbs tier) are Ethernet anyway I belive.
