I did this a while back for a few years on FIOS. I had them switch the internet over to the ethernet port on the ONT (instead of MOCA). Just used the coax for CATV. I vaguely remember however that the cable channel guide info was tied to their modem. The FIOS modem they provided also had some maintenance port open that could not be closed.
The ERL and AP I used at the time had no problems working with Verizons internet connection. Do some googling.
