CAM table and ARP cache are two different things. What you are displaying with the interfaces are only there because these eth interfaces are routed. If you are using a virtual interface behind a few ports configured as switchports you will only see the virtual interface name and not what port it's attached to. Let's say you have four ports configured under the same switch. There's a single virtual interface. and there's your Internet access port, which is a routed port let's assume. in that case you will see only two interfaces in your arp cache.
I dont know how to display the CAM table. If anywhere, it should be something like run show switfch switch0 mac-address-table. but that's not the case.
